The flavor of Coratina olive oil perfectly captures what people think of when they think of a green Italian olive oil. Coratina is an early harvest olive oil, with a strong green olive aroma. Its high polyphenol levels give Coratina a strong peppery finish. Coratina olives are harvested early, when the olives start to turn black at the tip or in warmer areas when the olives turn from green to yellowish.
